Cooking Tips:

Choosing the Freshest Shrimp

When selecting shrimp for this dish, opt for fresh, firm shrimp with a mild sea scent. Avoid any shrimp that have a strong fishy odor or a slimy texture, as these are signs of spoilage. If using frozen shrimp, thaw them properly in the refrigerator to maintain their texture and flavor.

Blanching Broccoli for Vibrant Color

Blanching the broccoli briefly in boiling water helps retain its bright green color and crisp texture. After blanching, immediately transfer the broccoli to a bowl of ice water to stop the cooking process. This technique not only enhances the presentation but also keeps the broccoli from becoming too soft when stir-fried.

Perfecting the Sauce Consistency

For a smooth and glossy sauce, make sure to dissolve the cornstarch completely in cold water before mixing it with other ingredients. Stir the sauce continuously while cooking to prevent any lumps from forming and to ensure even thickening. If the sauce becomes too thick, you can thin it out by adding a little water or broth until you reach the desired consistency.
