The recipe here is a very simple chicken adobo but the only difference is adding it with soda crackers and soda lime softdrinks like 7-Up or Sprite. You will be amazed by just adding crushed soda crackers will make the chicken adobo tastier and appetizing. It’s because the adobo sauce is richer and thicker. The lime soda too adds a flavorful taste of the adobo by tenderizing it and has a slight sweet taste. I also made this a little spicy by adding long green chilies but you can use siling labuyo or bird’s eyes chilies to make it even more spicier.
How to Cook Chicken Adobo with Soda Crackers
Ingredients
- 3/4 to 1 kilo chicken cut into serving pieces
- 1/3 cup soy sauce
- 1/3 cup white vinegar
- 1 cup 7-Up or Sprite softdrinks
- 1 tsp. ground black pepper
- 6 cloves garlic crushed
- 1 piece onion chopped
- 3 pcs bay leaves
- 1 tsp. granulated seasoning optional
- 1 small pack soda crackers onion and chives flavor
- 2 pcs siling haba sliced thinly
- fried garlic for garnishing

How to Cook Chicken Adobo with Soda Crackers
- Cut the chicken into serving pieces and set aside. Pound and crush the soda crackers until it becomes like a Japanese or Panko bread crumbs.
- In a deep pan or wok, heat 2Tbsp. of cooking oil and saute garlic and onion until soft.
- Add the chicken and stir fry until the the skin is slightly brown and the fat renders from the chicken.
- Add soy sauce, vinegar, ground black pepper and bay leaves. Bring to a boil and do not stir. Simmer for 10 minutes and cover.
- After 10 minutes, add the 7-Up or Sprite softdrinks. Cover and simmer for 15 minutes or until the chicken is tender.
- Add in half the sliced siling haba and the crushed soda crackers. Stir until the soda crackers is well mixed with the sauce and becomes thick.
- Turn off heat and serve in a serving plate. Garnish with sliced siling haba and fried garlic.
