Browning is not usually done in Filipino cooking specially in cooking adobo. Maybe the reason why adobo is so popular is because of it’s simplicity by just throwing every ingredients in a pot and simmering it for a few hours. This recipe I have here is quite unique where you have to fry or brown the chicken meat first then cooking it adobo style.
To cook browned chicken adobo; Wash the chicken and cut into desired pieces. Drain and fry in hot oil until brown. In a pot put the fried chicken, garlic, soy sauce, onion, bay leaves, sugar, siling labuyo, Sprite and black pepper. Turn on heat, cover and simmer for until the sauce is reduced to half.
How to Cook Browned Chicken Adobo
Ingredients
- 1 kilo chicken your choice cuts
- 1/2 head garlic crushed
- 1 pc onion chopped
- 1/3 cup soy sauce
- 1/3 cup vinegar
- 1 Tbsp. brown sugar
- 1 cup Sprite or 7-up
- 2 pcs bay leaves
- 1 pc siling labuyo
- 1/2 tsp. cracked black pepper
- cooking oil for frying

- Turn on heat, cover and simmer until tender and the sauce is reduced to half.
- Serve hot.
